Old style traditional ginger cake, beloved by my family for generation(s)
4oz of treacle, 4oz of syrup and 4oz of butter.
Melt the butter together with the syrup and treacle. Let it cool a little before adding 200ml of milk. Put to one side.
200g plain flour, 2oz of brown sugar, 2 teaspoons of ground ginger, 1 of bicarbonate of soda, 1 of mixed spice, 1/2 a teaspoon of cinnamon.
Mix the dry ingredients together in a bowl, leaving a well in the centre. Crack an egg into the well.
Now gradually pour the wet ingredients into the dry, mixing as you go.
Pour the disgusting looking mess into a lined 9″ cake tin.
Bake at 160 degrees C for one hour, or until a knife come out clean.
Put on cooling tray.
Eat.
